  • 1½ cup granulated sugar

  • 3 sticks of unsalted butter (softened)
  • 2 large eggs
  • ½ tsp vanilla
  • 6 cups old-fashioned rolled oats
  • ¾ cup raisins
  • ½ cup minced walnuts

Necessary Equipment:

  • stand or hand mixer
  • 1 large bowl
  • measuring spoons and cups
  • cookie sheet
  • oven preheated to 350°F.  (180°C)

Preparation Instructions

Step 1

In a large bowl, cream together butter and sugar.  Add in eggs one by one, mixing well after each addition.  Stir in vanilla and set aside.  Mix flour, baking soda, salt, and raisins separately. Slowly add flour mixture to wet ingredients while mixing well.

Step 2

Place the cookie sheet in the oven and wait until you hear the oven signals that it is done preheating.  Next, take 1 tbsp of dough and place it on the cookie sheet.  I like to make mine a little bigger than normal.  Once you finish that, put the cookie sheet back in the oven and wait for the cookies to cook.  Mine took about 7 minutes.

Step 3

Once they are done, leave them on the cookie sheet to cool, and they will harden over time.

Tips:

– If you want to store them in the fridge, leave them out for 30 minutes before enjoying them.

– I like to make my cookies on a silicone mat, making the bottoms super easy to remove.
