- 1 cup (250 g) Gluten-Free Flour (we use ½ cup Oat Flour + 1/4 cup Cornstarch + ¼ tsp Baking Powder )
- One heaped tsp Baking Powder (optional) cornstarch can be added- just not too much as it.
Preheat the oven to 350°F (180°C). Put the cornflour and baking powder into a small bowl. Stir to combine.
In a large mixing bowl, whisk the almond milk, butter, vanilla extract, coconut oil, and honey until thoroughly combined.
Add the brewed coffee and salt to the mixture. Whisk well. Gradually add flour mixture until combined. The dough will be quite dry. Don’t worry-the cookies will be chewy when baked! Mix until thoroughly combined.
Put a small handful of the dough (approximately ¼ cup) into the palms of your hands and roll it into a ball. Place it on a baking tray with parchment paper (you can also line your baking tray with Parchment paper). Repeat until all the dough has been rolled into balls.
