- Three cups old fashioned oats.
- ½ teaspoon salt.
- ½ teaspoon ground cinnamon.
- ¾ cup brown sugar.
- 2 ½ cups powdered sugar.

- 1 tablespoon milk
- .¾ cup unsalted butter softened.
- Hand mixer.
- Food processor.
- 8-inch springform pan.

Cream the butter, sugar, cinnamon, and brown sugar until smooth. Mix in the vanilla bean paste, molasses, and vanilla extract, add the egg and mix until combined.
Mix the flour, salt, and baking soda in a separate bowl, then add to the wet ingredients and mix until combined.
Mix in the oats and roll into balls with your hands, place on a baking sheet lined with parchment paper. The balls should be approximately 2inches apart.
Bake the cookies for 10 minutes or until lightly golden brown. Allow cooling completely before moving on to the next step.
Cream the butter, vanilla bean paste, and vanilla extract until smooth.
Mix in the powdered sugar 1 cup until fully combined, then add the milk.
Pipe or spread the filling onto each cookie and place another cookie on top, gently pressing down.
